Cookin'

Ok I don't know if a salad qualifies as cooking but I toasted some french bread in the oven so it should! On Feb. 13th at our Valentine's Dinner I ordered a Beet and Goat Cheese Salad. It was delicious so I figured I could replicate it at home. I used a bag of spring mix, canned sliced beets, and goat cheese with basil. At the restaurant they used a goat cheese rolled in herbs, but lacking a food proccessor to get a nice minced herb I bought goat cheese with basil in it. Then I toasted up the french bread with a warm spread of goat cheese. I also made a lemon herb vinagrette to go on top. It was my first vinagrette I ever made, and it was yummy! Surprisingly easy too!
On Saturday I intended to make Baked Eggs in Ham Cups. I don't have a muffin tin, isn't that shocking? So I used the bowls I use for french onion soup. I got the recipe from a brunch book I checked out of the library in prep for Easter Brunch. Hef's dad was excited when he saw the Egg Cups on the cover of the book. I was a bit annoyed as I specifically picked out a nice round ham to get nice round slices. Instead the deli lady gave me broken bits from the display so I had to layer and twist them around. When I had first started this process before Hef's dad saw the cover photo, he walked in and said I don't want bacon! Thats how messy my ham slices were. Anyway two eggs went in each cup with mozzarella cubes and cherry tomatoes, bake til eggs are done, let cool and serve.

Say - trade the bathroom scale in on a food processor!!!!

Saw a bit of Julia making crepes the other night - yummmmm - hard! But - you can also make crepes easily in a small frying pan over a camp fire and go with style!!!
